Jalapeño Popper Dip Recipe

Jalapeño Popper Dip Recipe
Another recipe brought to you by my handsome husband. I know you can probably find about a million recipes of this dip around the internet, but I didn’t even know this Jalapeño Poppers came in dip form until last year…. and it’s a must in your life. Cheese… spice… bread crumbs! With chips! I mean really…. Below is how my husband puts together his recipe…

Jalapeño Popper Dip Recipe

Ingredients:

  • 2 (8 oz) packages of cream cheese, room temp
  • ½ cup mayonnaise
  • ½ cup low fat sour cream
  • 1 cup shredded cheese (combine: monteray jack, pepper jack, mozzarella, chedder)
  • 1/2 cup finely grated parmesan cheese
  • 1 (4 oz) can of green chiles
  • 1 (4 oz) can of jalapenos
  • 1-2 cups panko bread crumbs mixed with additional
  • ½ cup of finely grated parmesan cheese
  • ½ stick melted butter

Directions:

Combine first 7 ingredients in food processor and blend until smooth and everything is mixed. Transfer mixture to your serving dish (flat casserole dish works well) with room at the top to eventually put bread crumb mixture. Cover mixture with plastic wrap and put in fridge for a few hours at least (tastes better if made a few hours ahead).

An hour or so before baking, take mixture out of fridge. Melt butter in microwave. Mix panko and ½ cup parmesan together and then mix with butter until all coated. Transfer panko mixture to top of dip and spread evenly making sure to pack it down well.

Bake when ready at 375 F for about 15-20 minutes or until a butter knife placed down in center of dip mixture comes out very warm.

Wordless{ish} Wednesday: My Grandpa’s Funeral.

{Last week my family and I celebrated my grandpa’s life. He passed away a couple of weeks ago. It wasn’t a shock… he’s been sick for some time. He was a veteran of World War II… so, it was a veterans funeral… I’ve never been to one. It was actually very beautiful. They did the 3 salute shot, the flag folding, and the very sweet/sad funeral trumpet song for him.}
{The trumpet song was so beautiful I immediately started crying. Not just for my grandpa and his kids (my uncles and mom), but for all the soldiers that lose their lives in battle… I spotted a few young women in the cemetery with their young children… I’m tearing up right now just thinking of losing your husband so young. I couldn’t even imagine.}
{I wasn’t sure if I actually wanted to take photos… but, then I realized this was a moment to remember. My great uncles (my grandpa’s 3 brother’s) aren’t together very often… at all. And, we barely get to see them. I know my future generations will appreciate these photos… just as I appreciate the photos my family took before I was born so I could see my past family!}

{This cemetery was gorgeous! Wildlife everywhere… so well kept and loved. AND, my baby butt, Ruari, was there. 😀 She wont remember her grandpa… but, she’ll have the photos to see she went to his funeral to celebrate is life.}

{And, one more thing… my brother carried my pretty purse/diaper bag the entire time we were there! That’s like 2 hours! What a good brother. I’m sure he’ll appreciate the photos I took of him. ;D}
