Peanut Butter Banana Blueberry Oat Bars

My Peanut Butter Banana Blueberry Oat Bars are free of refined sugars and flour. This recipe is gluten free when using baking powder and oats that are not contaminated with gluten.

These bars are the perfect breakfast item or snack. My kids LOVE them and I don’t feel bad letting them eat this “treat” whenever they want because it’s sweetened with bananas and a bit of honey. I’ve been making these bars so often for the past year I don’t even need to follow the recipe. It’s so easy to make and popular in our home I thought I should share it with you guys.

Peanut Butter Banana Blueberry Oat Bars Ingredients

  • 3 very ripe large bananas (or 4 smaller)
  • 1/4 cup milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup peanut butter
  • 1/4 cup coconut oil
  • 2 tbsp honey
  • 3 1/2 cups rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 1/2 cups blueberries

Directions:

Step 1:

Preheat oven to 360°F and lightly coat a 9″ x 13″ baking dish with olive oil or butter.

Step 2:

Squish the bananas while in the peels, open them up, and put them in a large mixing bowl. Use a spatula to smoosh down any extra banana chunks.

Step 3:

Beat the egg and add to the milk. Add in the vanilla and mix.

Step 4:

Add the peanut butter and coconut oil to a microwave safe bowl and heat it up. The coconut oil will melt very fast so keep an eye on it. Add the honey to the bowl and mix together until well combined.

Step 5:

Pour the oats into a bowl. Sprinkle the baking soda and cinnamon over the oats and mix the dry ingredients together.

Step 6:

Pour all of your prepped wet ingredients into the large mixing bowl with the bananas. Blend until combined. Add the oat mixture and blend until combined. Gently fold in your berries and add the mixture to the baking dish and smooth it out.

Step 7:

Bake in the oven for 30 – 40 minutes or until done. Test the middle of the bars with a toothpick to check doneness. Let them cool completely before cutting. Store in the refrigerator for up to a week. Enjoy!

In my video I used a mixture of berries, but my daughter’s prefer these when there’s only blueberries. It’s up to you!
