Grain Free Peanut Butter Zucchini Bread Recipe

I have not shared a “tried it” post in… I don’t even know how long. These posts give me a chance to share a successful (or failed) recipe or DIY or whatever from Pinterest. I’m happy to say this particular post is a successful recipe.

This week my oldest daughter and I made this Grain Free Peanut Butter Zucchini Bread Recipe, from Ambitious Kitchen. It turned out great! It’s light and spongy and I don’t feel bad giving this “treat” to my girls for breakfast (because sometimes mornings are too early).

This “treat” is grain free and perfect for anyone that eats gluten free. It’s also very easy to adjust for anyone that can’t eat peanuts (just swap out the peanut butter for another nut butter). The items below are what I used to make this recipe. I skipped the chocolate chips, so I didn’t feel bad giving this to my girls for breakfast, and I used honey instead of maple syrup.

Ingredients:

  • shredded zucchini
  • all natural creamy peanut butter
  • pure honey
  • 2 large eggs
  • vanilla extract
  • coconut flour
  • baking soda
  • cinnamon

Head over to the Ambitious Kitchen to get all the measurements and details for this yummy recipe.

If you love baking you should check out how I made my own vanilla extract. I made a batch of this about four years ago and I’m still enjoying it all these years later. Click on the link if you want to learn more (it comes with vanilla and spice jar labels to download and print).
