Watergate Salad Recipe

You can’t go to a bbq on the Eastern Shore of Maryland without seeing Watergate Salad. I never knew what it was growing up, but I knew it was delicious and either my Grandma or an Aunt would make it for summer get togethers.
I was recently asked to bring a dessert to a coming up Easter get together with the inlaws and I immediately thought of this Southern 70’s dish. And I’m not sure if it’s a regional thing, but I haven’t found a single Californian who’s heard of it! If you want to serve something unique this Easter, please check out this delicious dessert!
Oh, and I should mention that it’s INSANELY easy. You seriously can’t mess this up.
What you need-
1 package/box of pistachio pudding
3 large handfuls of marshmallows (or eyeball it)
1 20 oz can of crushed pineapple
1 container of Cool Whip
Directions-
Throw all the above ingredients together. No need to drain the pineapple either. Mix it all up and let it sit in the fridge for an hour before serving.
This dessert is very light tasting and believe it or not, not too sweet! It’s light green color (from the pistachio pudding) makes it very nice for Easter. I love this salad!

This last Wednesday I enjoyed a little tour of the local West Elm store in Portland. They wanted to share their new summer collections and color stories. It was fun! You don’t normally get the back story of everything in a store. So, I really liked that! My favorite item of the evening…. this handmade dining table made from reclaimed pine. I love it when a company uses old materials in it’s creations. Plus, they shared these sweet little gifts with us (some info on the vase and tea light holder from Maria Moyer).

YUM. This Gruyere Potato Gratin was delicious. I made it the other night. So yum.

We are just getting stuff put together for our garden! Found a fun garden website I think will help!

On vacation.

The family and I are going to be taking a couple of days off of the blog world and cuddle together! I’ll have some blog posts saved up and scheduled for you and maybe a couple of guest bloggers. Realizing I needed glasses

When i was little i never really knew that there was anything wrong with my eyesight. I always sat right up in front of the tv…. Because it looked so much better up close. I never understood why everyone else sat so far away from the television when it was obviously nicer where I was. (suckers.) and yeah… I just assumed every face was a little blurry from a distance. You had to stand close to see features.

I vividly remember the day I realized I needed glasses. I was in 3rd grade. The teacher asked me to read out loud what was on the board…. I looked up and thought, “that actually says something?” So, feeling the pressure I just tried my best: “Watermelon, on the blanket goes up.” I said something similar to that. Not English. I was a very good reader… And, my teacher knew this. So, she moved on to someone else and asked them to read instead. I’m guessing she called my mom and was like, “Dude, your daughter be flippin crazy with her eyes and all that yo!” or something along those lines… I found myself at the eye doctor a week later…. And, shortly after that…. With the BEST GLASSES EVER! (see below for the amazing example… I picked them out myself. Why so big?)

So, here I am today…. Still blind as all get up. But, luckily my eyesight has barely worsened since the day I got my glasses. My husband even wears glasses. I bet you Ruari is destined to wear glasses some day.

Delicious Apple Pie

We celebrated my sweet grammy’s birthday this last Sunday. I made a pie for her birthday treat. I must say… it was delicious. Oh goodness. So good. Apple pie is one of my favorite. In case you’re curious…. here’s the filling and pie crust recipe I used to make this delicious apple pie. Both wonderful recipes. I’ve made many a apple pies in my life… I think this pie crust recipe I use was the best! It’s all about getting the right balance. This recipe has balance.

Yes, I know… I don’t like cooking, but I love baking pie. I’m weird.

My outfit for the day was so very relaxed. Yes, I wore Halloween socks over my pants. Ha! I was cold. BUT, very comfy. Plus, my family liked my outfit. Hee hee.
