You can’t go to a bbq on the Eastern Shore of Maryland without seeing Watergate Salad. I never knew what it was growing up, but I knew it was delicious and either my Grandma or an Aunt would make it for summer get togethers.
I was recently asked to bring a dessert to a coming up Easter get together with the inlaws and I immediately thought of this Southern 70’s dish. And I’m not sure if it’s a regional thing, but I haven’t found a single Californian who’s heard of it! If you want to serve something unique this Easter, please check out this delicious dessert!
Oh, and I should mention that it’s INSANELY easy. You seriously can’t mess this up.
What you need-
1 package/box of pistachio pudding
3 large handfuls of marshmallows (or eyeball it)
1 20 oz can of crushed pineapple
1 container of Cool Whip
Directions-
Throw all the above ingredients together. No need to drain the pineapple either. Mix it all up and let it sit in the fridge for an hour before serving.
This dessert is very light tasting and believe it or not, not too sweet! It’s light green color (from the pistachio pudding) makes it very nice for Easter. I love this salad!

This is my aunt's signature dish at family gatherings. She puts pecans in hers.
I heard them talking about this dish on NPR's A Way with Words too. It's also known as "foo foo poo salad."
Oh yeah, I've totally had this. Not with pistachio though. Slight variations. I can't remember what we call it in Oregon but in New Zealand it's pretty common and is called Ambrosia.
Dude. My mom makes that all the time in the summer! It's my favorite! I didn't know other people ate it too; I thought she made it up. Funny how she never corrected that misconception!
Yum! My grandmother makes this all the time and it has always been a favorite of mine. We call it "Green Goddess Salad". Don't you love how loosely we use the term "salad" in the south? haha
This was always my favorite and when I went off to college my mom would send me the ingredients plus 5 bucks for cool whip, ya know, ‘cuz I was poor and stuff. I love it!

We always have this at family dinners but we call them fruit salad. Which makes me think of the Wiggles. Oh the joys of having kids.
My family puts other fruits in there, too, like apples and I think grapes. I've always just eaten the marshmallows out of it. Lol.
